Description

Ingredients

  • 1 lb lean ground beef or turkey
  • 1 can (15 oz) refried beans
  • 8 oz tortilla chips
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 cup salsa
  • 1 cup chopped bell peppers
  • 1 medium onion, diced
  • 2 tsp cumin
  • 2 tsp chili powder
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a skillet, cook the ground meat over medium heat until browned; drain excess fat.
  2. Add diced onion and chopped bell peppers to the skillet. Sauté for about 5 minutes until softened.
  3. Stir in refried beans, cumin, and chili powder; mix until heated through.
  4. In a baking dish, layer half of the tortilla chips, followed by half of the meat mixture, half of the salsa, and 1 cup of cheese. Repeat these layers with the remaining ingredients.
  5. Bake for 20-25 minutes until bubbly and golden brown. Let cool slightly before serving.

Notes

  • For added flavor, use black beans instead of refried beans or mix in corn.
