- 1 can (15 oz) refried beans
- 8 oz tortilla chips
- 2 cups shredded cheddar and Monterey Jack cheese
- 1 cup salsa
- 1 cup chopped bell peppers
- 1 medium onion, diced
- 2 tsp cumin
- 2 tsp chili powder
- Fresh cilantro (optional)
Instructions
- Preheat oven to 350°F (175°C). In a skillet, cook the ground meat over medium heat until browned; drain excess fat.
- Add diced onion and chopped bell peppers to the skillet. Sauté for about 5 minutes until softened.
- Stir in refried beans, cumin, and chili powder; mix until heated through.
- In a baking dish, layer half of the tortilla chips, followed by half of the meat mixture, half of the salsa, and 1 cup of cheese. Repeat these layers with the remaining ingredients.
- Bake for 20-25 minutes until bubbly and golden brown. Let cool slightly before serving.
Notes
- For added flavor, use black beans instead of refried beans or mix in corn.
- Consider topping with avocado slices after baking for freshness.
- Store leftovers in an airtight container for up to three days; reheat in the oven at 350°F until warmed through.
