Ingredients

  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 2 tsp olive oil
  • 2 tsp southwest spice blend (paprika, cumin, garlic powder, chili powder)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 4 large flour tortillas
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream or Greek yogurt
  • 2 cups lettuce or spinach leaves

Instructions

  1. Preheat a skillet over medium-high heat. Season chicken breasts with salt and pepper.
  2. Drizzle olive oil in the skillet and sear the chicken for 6-7 minutes on each side until golden brown and cooked through (165°F internal temperature).
  3. Remove chicken from the skillet and let it rest. Add sliced bell peppers and onions to the same skillet; sauté for about 5 minutes until tender.
  4. Slice the rested chicken into strips or cubes.
  5. On each tortilla, layer lettuce, sautéed vegetables, and chicken. Top with cilantro and sour cream or Greek yogurt.
  6. Fold tortillas tightly around filling and serve.
