- 2 tsp southwest spice blend (paprika, cumin, garlic powder, chili powder)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 4 large flour tortillas
- ¼ cup fresh cilantro, chopped
- ½ cup sour cream or Greek yogurt
- 2 cups lettuce or spinach leaves
Instructions
- Preheat a skillet over medium-high heat. Season chicken breasts with salt and pepper.
- Drizzle olive oil in the skillet and sear the chicken for 6-7 minutes on each side until golden brown and cooked through (165°F internal temperature).
- Remove chicken from the skillet and let it rest. Add sliced bell peppers and onions to the same skillet; sauté for about 5 minutes until tender.
- Slice the rested chicken into strips or cubes.
- On each tortilla, layer lettuce, sautéed vegetables, and chicken. Top with cilantro and sour cream or Greek yogurt.
- Fold tortillas tightly around filling and serve.
