Ingredients

  • 8 rice paper wrappers
  • 1 cup shredded cabbage
  • 1/2 cup grated carrots
  • 1/2 cup chopped mushrooms (shiitake or button)
  • 1/4 cup fresh herbs (cilantro and mint)
  • 2 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
  • Oil for cooking

Instructions

  1. Prepare your workspace by gathering all ingredients and filling a large bowl with warm water.
  2. Soak one rice paper wrapper in warm water for 10-15 seconds until pliable. Lay it flat on a clean surface.
  3. In a bowl, combine cabbage, carrots, mushrooms, garlic, herbs, and soy sauce; mix gently.
  4. Place approximately two tablespoons of filling at the edge of the soaked wrapper. Fold over both sides tightly and roll from bottom to top.
  5. Heat a non-stick skillet over medium heat with a drizzle of oil. Cook each dumpling for 3-4 minutes per side until golden brown.
  6. Serve hot with your choice of dipping sauce.
