- 1 cup granulated sugar
- 2 tsp pure vanilla extract
- 1/2 cup water
- 1/4 tsp salt
Instructions
- Wash and chop the fresh rhubarb into bite-sized pieces.
- In a medium saucepan over medium heat, combine rhubarb, sugar, and water. Stir until well mixed.
- Allow the mixture to simmer gently for 10-15 minutes until rhubarb softens.
- Stir in the vanilla extract and let it cook for an additional minute.
- Remove from heat and cool slightly before transferring to jars. Let cool for at least 20 minutes before storing.
Notes
- Feel free to substitute sugar with honey or maple syrup for a different sweet note.
