Description

Refreshing and vibrant, this green goddess salad combines fresh greens and a creamy herb dressing for a delightful meal that’s both nourishing and delicious.

Ingredients

Scale
  • 4 cups romaine lettuce, chopped
  • 2 cups baby spinach
  • 1 medium cucumber, diced
  • 1 ripe avocado, sliced
  • ½ cup fresh basil leaves
  • ½ cup fresh parsley leaves
  • Juice of 1 lemon
  • ½ cup plain Greek yogurt
  • ¼ cup extra virgin olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the romaine lettuce and spinach thoroughly; pat dry.
  2. Dice the cucumber and slice the avocado into wedges.
  3. In a blender, combine Greek yogurt, lemon juice, garlic, olive oil, basil, parsley, salt, and pepper; blend until smooth.
  4. In a large bowl, combine greens and veggies. Pour dressing over and toss gently.
  5. Serve immediately or refrigerate (dressing on the side) for up to three days.

Notes

  • For added crunch, consider tossing in toasted sunflower seeds or walnuts.
  • Swap seasonal veggies like bell peppers or cherry tomatoes for variety.
  • If you prefer a dairy-free option, substitute Greek yogurt with tahini.
