- 4 cups romaine lettuce, chopped
- 2 cups baby spinach
- 1 medium cucumber, diced
- 1 ripe avocado, sliced
- ½ cup fresh basil leaves
- ½ cup fresh parsley leaves
- Juice of 1 lemon
- ½ cup plain Greek yogurt
- ¼ cup extra virgin olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Rinse the romaine lettuce and spinach thoroughly; pat dry.
- Dice the cucumber and slice the avocado into wedges.
- In a blender, combine Greek yogurt, lemon juice, garlic, olive oil, basil, parsley, salt, and pepper; blend until smooth.
- In a large bowl, combine greens and veggies. Pour dressing over and toss gently.
