Ingredients

  • 4 cups sliced fresh cucumbers (about 2 large cucumbers)
  • 1 cup full-fat sour cream (or Greek yogurt)
  • 2 tablespoons fresh dill (or 1 tablespoon dried dill)
  • 1 teaspoon garlic powder
  • 2 tablespoons freshly squeezed lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ small red onion, thinly sliced (optional)

Instructions

  1. Wash and slice the cucumbers thinly using a sharp knife or mandoline.
  2. In a large bowl, whisk together sour cream, lemon juice, dill, garlic powder, salt, and pepper until well combined.
  3. Toss the cucumber slices in the dressing until evenly coated.
  4. If using, fold in the sliced red onion for extra flavor and color.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
  6. Serve in a beautiful bowl and enjoy!

Notes

  • For added crunch, you can sprinkle some cherry tomatoes on top before serving.
