- 1 cup full-fat sour cream (or Greek yogurt)
- 2 tablespoons fresh dill (or 1 tablespoon dried dill)
- 1 teaspoon garlic powder
- 2 tablespoons freshly squeezed lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ small red onion, thinly sliced (optional)
Instructions
- Wash and slice the cucumbers thinly using a sharp knife or mandoline.
- In a large bowl, whisk together sour cream, lemon juice, dill, garlic powder, salt, and pepper until well combined.
- Toss the cucumber slices in the dressing until evenly coated.
- If using, fold in the sliced red onion for extra flavor and color.
- Cover and chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
- Serve in a beautiful bowl and enjoy!
Notes
- For added crunch, you can sprinkle some cherry tomatoes on top before serving.
