  • 4 cups low-sodium vegetable broth
  • 2 bay leaves

Instructions

  1. Prepare the Beans: If using dried red beans, soak them overnight in water.
  2. Sauté the Vegetables: In a large pot over medium heat, add olive oil. Sauté chopped onion, bell pepper, celery, and garlic until tender.
  3. Add Spices & Seasoning: Stir in Cajun seasoning and bay leaves; cook for 1-2 minutes until fragrant.
  4. Combine Broth & Beans: Add vegetable broth and soaked (or canned) red beans to the pot. Bring to a gentle boil then reduce heat.
  5. Incorporate Rice: Stir in jasmine rice once boiling. Cover and simmer on low for about 20 minutes until the rice absorbs all liquid.
  6. Finishing Touches: Remove bay leaves, fluff with a fork, and garnish with parsley or green onions before serving.
