- 2 packs udon noodles
- 2 tbsp chili oil (adjust to taste)
- 2 tbsp low-sodium soy sauce
- 2 cloves garlic, minced
- 2 green onions, chopped
- 1 tsp toasted sesame seeds
- ½ cup sliced bell peppers or bok choy (optional)
Instructions
- Cook Udon Noodles – Boil water and cook udon noodles according to package instructions until tender but chewy. Drain and set aside.
- Prepare Sauce – In a small bowl, mix soy sauce and chili oil. Add extra chili flakes if you like it spicier.
- Sauté Garlic & Veggies – Heat a skillet over medium heat and sauté minced garlic for 1 minute. If using, add bell peppers or bok choy and cook until just tender.
- Toss Noodles – Add the cooked udon noodles to the skillet. Pour in the chili oil mixture and toss everything together until well coated.
- Garnish & Serve – Stir in chopped green onions and sprinkle toasted sesame seeds on top. Serve hot and enjoy!
