Ingredients

  • 2 packs udon noodles
  • 2 tbsp chili oil (adjust to taste)
  • 2 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 1 tsp toasted sesame seeds
  • ½ cup sliced bell peppers or bok choy (optional)

Instructions

  1. Cook Udon Noodles – Boil water and cook udon noodles according to package instructions until tender but chewy. Drain and set aside.
  2. Prepare Sauce – In a small bowl, mix soy sauce and chili oil. Add extra chili flakes if you like it spicier.
  3. Sauté Garlic & Veggies – Heat a skillet over medium heat and sauté minced garlic for 1 minute. If using, add bell peppers or bok choy and cook until just tender.
  4. Toss Noodles – Add the cooked udon noodles to the skillet. Pour in the chili oil mixture and toss everything together until well coated.
