Description

Mediterranean Cod is a vibrant, healthy dish that showcases flaky fish paired with fresh herbs and juicy cherry tomatoes, perfect for any meal or gathering.


Ingredients

  • 4 fresh cod fillets (150g each)
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • 1 cup halved cherry tomatoes
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels.
  3. In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, pepper, parsley, and oregano.
  4. Place the cod fillets in an oven-safe baking dish and generously coat them with the marinade.
  5. Scatter cherry tomatoes around the fish.
  6. Bake for 15-20 minutes until the cod flakes easily with a fork.
  7. Garnish with additional herbs if desired and serve immediately.
