- 1 pound raw shrimp, deveined
- 8 ounces spaghetti or linguine
- 4 cloves garlic, minced
- ¼ cup extra virgin olive oil
- 4 tablespoons unsalted butter
- Juice and zest of 1 lemon
- ¼ cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot and cook spaghetti until al dente according to package instructions. Reserve some pasta water before draining.
- In a large skillet over medium heat, melt olive oil and butter together. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add raw shrimp along with salt and pepper. Cook for about 3-4 minutes until shrimp turn pink and opaque.
- Squeeze fresh lemon juice over the shrimp mixture while adding lemon zest. Stir to combine flavors.
- Toss the drained pasta into the skillet with the shrimp mixture, gently mixing everything together. Add reserved pasta water if needed for moisture.
- Remove from heat and sprinkle chopped parsley on top before serving hot.
Notes
- Feel free to add cherry tomatoes or spinach for added color and nutrition.
- Store leftovers in an airtight container in the fridge for up to three days; reheat gently with a splash of water.
