Ingredients

  • 1 cup whole milk (or alternative)
  • 2 large eggs (room temperature)
  • 1/2 cup melted butter (cooled)
  • 8 oz softened cream cheese
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a muffin tin with liners or grease lightly.
  2. In a large bowl, combine flour, baking powder, sugar, cinnamon, and salt. Whisk until evenly mixed.
  3. In another bowl, whisk together milk, eggs, melted butter, and vanilla extract until well blended.
  4. In a small bowl, beat softened cream cheese until smooth; mix in a tablespoon of sugar and a dash of cinnamon.
  5. Gradually add the dry mixture to the wet ingredients using a spatula; mix gently to avoid overmixing.
  6. Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture, then top with remaining batter.
  7. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean. Allow to cool slightly before serving.
