Description

Grilled Stone Fruit Salad is a refreshing, sweet dish that features juicy peaches, nectarines, and plums grilled to perfection. Perfect for summer gatherings or light meals!

Ingredients

Scale
  • 2 ripe peaches, halved and pitted
  • 2 firm nectarines, halved and pitted
  • 2 ripe plums, halved and pitted
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • ¼ cup fresh mint leaves, chopped
  • ¼ cup crumbled feta cheese (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Wash and slice the stone fruits in half, removing the pits.
  3. Drizzle olive oil over the fruit halves and toss gently to coat.
  4. Place the fruits cut-side down on the grill for about 3-4 minutes until grill marks appear and sugars caramelize.
  5. Remove from heat and drizzle with lemon juice; add chopped mint leaves and toss gently.
  6. If desired, combine with crumbled feta cheese before serving.

Notes

  • For added sweetness, consider drizzling honey or maple syrup over the salad.
  •  Use seasonal stone fruits for maximum flavor.
  •  This salad can be made ahead; just grill the fruit and assemble right before serving.
