A delightful blend of sweet grilled peaches and creamy burrata, perfect for summer gatherings or a refreshing light meal.
Ingredients

- 4 ripe peaches, halved and pitted
- 8 oz fresh burrata cheese
- 4 cups arugula (or spinach)
- 2 tbsp honey
- 2 tbsp balsamic vinegar
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat and lightly oil the grates.
- Grill peach halves cut-side down for 4-5 minutes until caramelized with grill marks.
- In a bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper for the dressing.
- Toss arugula in a large bowl with some dressing until lightly coated.
- On serving plates, layer arugula topped with grilled peaches cut-side up and dollop burrata over each peach half.
- Drizzle remaining dressing before serving warm or at room temperature.
Notes
- Substitute spinach for arugula if desired.
- Add chili flakes for a spicy twist or swap burrata for feta cheese for a different flavor profile.
