Description

A delightful blend of sweet grilled peaches and creamy burrata, perfect for summer gatherings or a refreshing light meal.


Ingredients

  • 4 ripe peaches, halved and pitted
  • 8 oz fresh burrata cheese
  • 4 cups arugula (or spinach)
  • 2 tbsp honey
  • 2 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat and lightly oil the grates.
  2. Grill peach halves cut-side down for 4-5 minutes until caramelized with grill marks.
  3. In a bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper for the dressing.
  4. Toss arugula in a large bowl with some dressing until lightly coated.
  5. On serving plates, layer arugula topped with grilled peaches cut-side up and dollop burrata over each peach half.
  6. Drizzle remaining dressing before serving warm or at room temperature.

Notes

  • Substitute spinach for arugula if desired.
  • Add chili flakes for a spicy twist or swap burrata for feta cheese for a different flavor profile.
