- 10 egg roll wrappers
- 1 lb ground turkey
- 1 cup shredded sharp cheddar cheese
- 1 cup finely chopped bell peppers (any color)
- 1/4 cup chopped fresh cilantro
- 2 tbsp taco seasoning
- 2 cups vegetable oil (for frying)
Instructions
- In a skillet over medium heat, cook the ground turkey until browned. Stir in taco seasoning and diced bell peppers until fragrant.
- Remove from heat and mix in shredded cheese and chopped cilantro until melted.
- Place an egg roll wrapper on a flat surface with a corner facing you. Spoon 2 tablespoons of filling near the corner; fold tightly away from you while tucking in the sides.
- Moisten the edges with water to secure them.
- Heat oil in a deep pan over medium heat until shimmering. Fry egg rolls in batches until golden brown on all sides.
- Remove from oil and drain on paper towels. Serve hot with salsa or guacamole.
Notes
- For extra crunch, add finely chopped carrots or zucchini to the filling.
- To make these vegetarian, replace the turkey with black beans or lentils.
