Description

Fusion Taco Egg Rolls are a scrumptious fusion of crispy wrappers and savory fillings, ideal for snacking or entertaining guests. These bite-sized delights will elevate any gathering!


Ingredients

  • 10 egg roll wrappers
  • 1 lb ground turkey
  • 1 cup shredded sharp cheddar cheese
  • 1 cup finely chopped bell peppers (any color)
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp taco seasoning
  • 2 cups vegetable oil (for frying)

Instructions

  1. In a skillet over medium heat, cook the ground turkey until browned. Stir in taco seasoning and diced bell peppers until fragrant.
  2. Remove from heat and mix in shredded cheese and chopped cilantro until melted.
  3. Place an egg roll wrapper on a flat surface with a corner facing you. Spoon 2 tablespoons of filling near the corner; fold tightly away from you while tucking in the sides.
  4. Moisten the edges with water to secure them.
  5. Heat oil in a deep pan over medium heat until shimmering. Fry egg rolls in batches until golden brown on all sides.
  6. Remove from oil and drain on paper towels. Serve hot with salsa or guacamole.

Notes

  • For extra crunch, add finely chopped carrots or zucchini to the filling.
  •  To make these vegetarian, replace the turkey with black beans or lentils.
