Ingredients

  • 45 pounds leg of lamb (bone-in)
  • 6 cloves garlic (minced)
  • 1 stick unsalted butter (softened)
  • 2 sprigs fresh rosemary (chopped)
  • 2 sprigs fresh thyme (chopped)
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix softened butter, minced garlic, rosemary, thyme, lemon zest, salt, and pepper until well combined.
  3. Pat the leg of lamb dry; rub with olive oil and season generously with salt and pepper.
  4. Create small slits in the lamb; insert garlic mixture into these pockets.
  5. Spread remaining garlic butter over the entire leg.
  6. Roast in a pan for about 1 hour and 30 minutes or until internal temperature reaches 145°F (medium-rare) or 160°F (medium).
