- 8 oz rotini or penne pasta
- 1 cup cherry tomatoes, halved

- 3 tbsp freshly squeezed lemon juice
- 2 tsp dried oregano

Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
- While the pasta cools, chop the cherry tomatoes, bell peppers, cucumber, and red onion into bite-sized pieces.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- In a large mixing bowl, combine the cooled pasta with the chopped vegetables. Pour the dressing over the salad and toss gently until well coated.
- Cover with plastic wrap and refrigerate for at least 30 minutes before serving.
