- 1 can (15 oz) black beans, rinsed and drained
- 1 cup shredded cheese (Monterey Jack or cheddar)
- 1 cup bell peppers, thinly sliced
- 1 small onion, diced
- 1 tsp cumin powder
- 2 tsp olive oil
- Salsa or guacamole for serving
Instructions
- Preheat a non-stick skillet over medium heat.
- Add olive oil to the skillet; sauté onions and bell peppers until softened.
- Stir in black beans and cumin powder; cook for about 3-5 minutes until heated through.
- On one half of each tortilla, layer cheese followed by the veggie-bean mixture. Fold the tortilla over.
- Cook each quesadilla in the skillet for about 3-4 minutes on each side until golden brown and crispy.
- Slice into wedges and serve with salsa or guacamole.

- For extra crunch, add corn or swap black beans for pinto beans.
