Description

Black Bean Quesadillas are a delicious, vegetarian treat featuring crispy tortillas, creamy black beans, and melted cheese. Perfect for a quick meal that satisfies all flavor cravings!


Ingredients

  • 4 large flour tortillas
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded cheese (Monterey Jack or cheddar)
  • 1 cup bell peppers, thinly sliced
  • 1 small onion, diced
  • 1 tsp cumin powder
  • 2 tsp olive oil
  • Salsa or guacamole for serving

Instructions

  1. Preheat a non-stick skillet over medium heat.
  2. Add olive oil to the skillet; sauté onions and bell peppers until softened.
  3. Stir in black beans and cumin powder; cook for about 3-5 minutes until heated through.
  4. On one half of each tortilla, layer cheese followed by the veggie-bean mixture. Fold the tortilla over.
  5. Cook each quesadilla in the skillet for about 3-4 minutes on each side until golden brown and crispy.
  6. Slice into wedges and serve with salsa or guacamole.
