Ingredients

  • 1 lb fresh fish fillets (cod or tilapia)
  • 4 cups low-sodium vegetable broth
  • 1 medium chopped onion
  • 3 minced garlic cloves
  • 1 can (14.5 oz) diced tomatoes
  • ¼ cup fresh parsley or dill, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • ½ tsp cayenne pepper (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic; sauté until translucent.
  2. Stir in diced tomatoes with their juices, then pour in vegetable broth and bring to a simmer.
  3. Gently add fish fillets; cook for about 8-10 minutes until the fish is opaque and flakes easily.
  4. Season with lemon juice, salt, pepper, and optional cayenne pepper. Mix well to combine flavors.
  5. Just before serving, stir in freshly chopped herbs for brightness. Serve hot with crusty bread.
