Indulge in this vibrant Asparagus & Feta Orzo Salad, a perfect blend of fresh ingredients that adds flair to any meal, whether it’s a summer picnic or a weeknight dinner.

Ingredients

Scale
  • 1 cup orzo pasta
  • 1 bunch fresh asparagus, trimmed and cut into bite-sized pieces
  • ½ cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh basil leaves, chopped
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. Blanch or steam the asparagus pieces for 3-4 minutes until bright green and crisp.
  3. In a large bowl, combine the cooked orzo, asparagus, cherry tomatoes, feta cheese, and basil. Toss gently.
  4. Whisk together lemon juice and olive oil in a small bowl, then drizzle over the salad while tossing lightly to coat.
  5. Season with salt and pepper to taste before serving.

Notes

  • Feel free to substitute asparagus with zucchini or add roasted cherry tomatoes for added sweetness.
  •  For an extra flavor boost, consider adding lemon zest or a splash of balsamic vinegar.
