Ingredients
Scale
- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, softened
- 1 large egg
- 2 cups all-purpose flour
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the pumpkin puree and egg until well combined.
- In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture while mixing gently until just combined.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes or until edges are golden while centers remain soft. Allow to cool on baking sheets for five minutes before transferring to wire racks.
Notes
- For a nutty twist, substitute half of the all-purpose flour with almond flour.
- Add chocolate chips or chopped nuts for extra texture.
- Chilling the dough for at least 30 minutes before baking helps maintain cookie shape and enhances flavor.
