Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine vegetable oil, eggs, vanilla extract, lemon zest, and chopped strawberries until well blended.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Allow to cool slightly on a wire rack before preparing the glaze by whisking powdered sugar with enough milk to achieve a drizzling consistency.
