Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine vegetable oil, eggs, vanilla extract, lemon zest, and chopped strawberries until well blended.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly on a wire rack before preparing the glaze by whisking powdered sugar with enough milk to achieve a drizzling consistency.
- Drizzle the glaze over the warm bread and serve.
