Description

Chimichurri chicken is a vibrant, herb-infused delight that brings bold flavors to your dinner table. Perfectly grilled and served with a zesty chimichurri sauce, this dish is sure to impress.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh parsley leaves
  • 4 garlic cloves
  • 3 tbsp red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Rinse and pat dry the chicken breasts. Season generously with salt and pepper on both sides.
  2. In a food processor, combine parsley, garlic, red wine vinegar, olive oil, red pepper flakes (if using), salt, and pepper. Blend until smooth with a slightly chunky texture.
  3. Marinate the chicken by placing it in a resealable bag and pouring half of the chimichurri sauce over it. Seal and refrigerate for at least 30 minutes.
  4. Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and discard excess marinade.
  5. Cook each side for about 5-7 minutes until golden brown and cooked through.
  6. Drizzle reserved chimichurri sauce over the cooked chicken before serving. Slice and enjoy with your favorite sides.

Notes

  • For an extra kick, substitute lime juice for red wine vinegar or add jalapeños to the chimichurri sauce.
