- 1 lb bone-in chicken thighs, skin removed
- 2 tbsp Cajun seasoning
- 1 can (14.5 oz) diced tomatoes, no added sugar
- 1.5 cups long-grain rice, rinsed
- 3 cups low-sodium chicken broth
- ¼ cup green onions, chopped (for garnish)
- ¼ cup fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add bell peppers and onion; sauté until softened (about 5 minutes).
- Push veggies to one side; add chicken thighs skin-side down. Sear for about 4-5 minutes per side until golden brown.
- Stir in minced garlic and cook until fragrant (around 1 minute).
- Add rinsed rice along with diced tomatoes and chicken broth; stir well.
- Bring to a gentle boil, then reduce heat to low. Cover tightly and simmer for 25-30 minutes until rice absorbs the liquid.
- Serve hot, garnished with green onions and parsley.
