- 1 large green cabbage
- 1 cup uncooked long-grain rice
- 1 lb ground turkey or chicken
- 1 medium onion, diced
- 3 cloves garlic, minced
- 14 oz canned diced tomatoes (with herbs)
- 1 cup low-sodium vegetable broth
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Prepare the cabbage by removing 12 large leaves and blanching them in boiling water for about 3 minutes until softened.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic and cook until fragrant.
- Stir in rice and ground turkey or chicken, cooking until browned and cooked through.
- Add diced tomatoes and their juices along with oregano, thyme, salt, and pepper. Mix well.
- Lay out each cabbage leaf; place about 1/4 cup filling at the base, roll tightly while tucking in the sides.
- Spread half of your marinara sauce in a baking dish, arrange the rolls snugly, then cover with remaining sauce.
- Cover with aluminum foil and bake at 350°F (175°C) for approximately 45 minutes.
