- 1 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1 cup all-purpose flour
- 1/2 cup melted butter
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- 1 cup mini chocolate chips
- 1 cup sweetened condensed milk
- 2 cups confectioners’ sugar
Instructions
- Preheat oven to 350°F (175°C) and grease a baking pan.
- In a bowl, mix melted butter and granulated sugar until smooth. Add cocoa powder and brown sugar, followed by eggs one at a time and vanilla extract.
- Fold in flour and mini chocolate chips until just combined. Pour into the prepared pan and bake for 20-25 minutes; check doneness with a toothpick.
- While cooling, beat softened butter, sweetened condensed milk, and confectioners’ sugar until creamy. Stir in remaining mini chocolate chips.
- Once brownies are cool, cut into squares, spread cookie dough on half, and top with another brownie square to create sandwiches.
Notes
- Chill the assembled cookies in the fridge for better shape when serving.
