Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup melted butter
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 cup mini chocolate chips
  • 1 cup sweetened condensed milk
  • 2 cups confectioners’ sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix melted butter and granulated sugar until smooth. Add cocoa powder and brown sugar, followed by eggs one at a time and vanilla extract.
  3. Fold in flour and mini chocolate chips until just combined. Pour into the prepared pan and bake for 20-25 minutes; check doneness with a toothpick.
  4. While cooling, beat softened butter, sweetened condensed milk, and confectioners’ sugar until creamy. Stir in remaining mini chocolate chips.
  5. Once brownies are cool, cut into squares, spread cookie dough on half, and top with another brownie square to create sandwiches.
