Description

Ingredients

  • 1 cup fresh blackberries
  • 2 large lemons (juiced and zested)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a bowl, mix melted butter, sugar, flour, and baking powder until crumbly. Press into the bottom of the prepared pan.
  3. Bake the crust for about 15 minutes until lightly golden.
  4. In another bowl, whisk together sugar, flour, eggs, lemon juice, and zest until smooth. Gently fold in blackberries.
  5. Pour the filling over the baked crust and return to the oven for 20-25 minutes until set but still slightly jiggly.
  6. Cool completely before slicing and dust with powdered sugar if desired.
