Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1/4 cup cornstarch
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp Sriracha sauce (adjust to taste)
  • Lettuce leaves for serving
  • 2 green onions, chopped (for garnish)
  • 1 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Pat the shrimp dry with paper towels to ensure crispiness.
  2. In a bowl, mix flour, cornstarch, and panko breadcrumbs.
  3. Heat oil in a skillet over medium-high heat until shimmering.
  4. Coat shrimp in the flour mixture and fry in batches for about 2-3 minutes on each side until golden brown.
  5. In another bowl, combine mayonnaise, sweet chili sauce, and Sriracha until smooth.
  6. Toss the fried shrimp in the sauce until well-coated.
  7. Serve on lettuce leaves garnished with green onions and sesame seeds.

Notes

  • For a gluten-free version, substitute all-purpose flour with gluten-free flour or additional cornstarch.
