Description

Baked Feta Pasta is a creamy, flavorful dish featuring melty feta and juicy tomatoes, perfect for impressing guests or enjoying a cozy weeknight meal.


Ingredients

  • 8 oz penne or fusilli pasta
  • 1 block (8 oz) feta cheese
  • 2 cups cherry tomatoes, halved
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried basil (or 2 tbsp fresh basil)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, drizzle olive oil and spread it evenly.
  3. Add halved cherry tomatoes and minced garlic, seasoning with salt and pepper.
  4. Place the block of feta cheese in the center and drizzle with more olive oil.
  5. Bake for 30 minutes until the tomatoes are bursting and the feta is golden brown.
  6. Meanwhile, cook pasta according to package directions until al dente; drain and reserve some pasta water.
  7. Once baked, combine the roasted vegetables and feta with the cooked pasta, adding reserved pasta water as needed for creaminess.
