- 8 oz penne or fusilli pasta
- 1 block (8 oz) feta cheese
- 2 cups cherry tomatoes, halved
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 tsp dried basil (or 2 tbsp fresh basil)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, drizzle olive oil and spread it evenly.
- Add halved cherry tomatoes and minced garlic, seasoning with salt and pepper.
- Place the block of feta cheese in the center and drizzle with more olive oil.
- Bake for 30 minutes until the tomatoes are bursting and the feta is golden brown.
- Meanwhile, cook pasta according to package directions until al dente; drain and reserve some pasta water.
- Once baked, combine the roasted vegetables and feta with the cooked pasta, adding reserved pasta water as needed for creaminess.
