Description
Avocado Toast with Poached Egg is a mouthwatering breakfast that combines creamy avocado and a perfectly poached egg atop crispy whole grain bread—nutritious, delicious, and ready in just 20 minutes!
Ingredients
Scale
- 2 ripe avocados (about 400g)
- 4 large eggs
- 4 slices whole grain bread
- 1 tsp salt (for poaching)
- Freshly cracked pepper to taste
- 2 tbsp lemon juice
- Red pepper flakes (optional)
Instructions
- Toast the whole grain bread until golden brown and crispy.
- While the bread is toasting, scoop avocados into a bowl. Add lemon juice, salt, and pepper; mash until creamy but still chunky.
- In a saucepan, bring water to a gentle simmer. Add salt. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3 minutes until whites are set but yolks remain runny.
- Spread the avocado mash generously over the toasted bread.
- Remove poached eggs with a slotted spoon and place one on each slice of avocado toast.
- Garnish with red pepper flakes if desired, then serve immediately.
Notes
- Use ripe avocados for the best flavor and texture.
- Customize your toast by adding toppings like sliced tomatoes or radishes.
- Store leftover avocado mash in an airtight container with lemon juice to prevent browning.
