Ingredients

  • 2 ripe avocados (about 400g)
  • 4 large eggs
  • 4 slices whole grain bread
  • 1 tsp salt (for poaching)
  • Freshly cracked pepper to taste
  • 2 tbsp lemon juice
  • Red pepper flakes (optional)

Instructions

  1. Toast the whole grain bread until golden brown and crispy.
  2. While the bread is toasting, scoop avocados into a bowl. Add lemon juice, salt, and pepper; mash until creamy but still chunky.
  3. In a saucepan, bring water to a gentle simmer. Add salt. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3 minutes until whites are set but yolks remain runny.
  4. Spread the avocado mash generously over the toasted bread.
  5. Remove poached eggs with a slotted spoon and place one on each slice of avocado toast.
  6. Garnish with red pepper flakes if desired, then serve immediately.
