- 8 oz lo mein noodles
- 1 cup bell peppers, sliced (any color)
- 1 cup carrots, julienned
- 1 cup broccoli florets
- 4 green onions, finely chopped
- 3 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 2 tsp sesame oil
- 1 tbsp vegetable broth (or water)
- 2 tsp cornstarch (optional)
Instructions
- Cook the lo mein noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium-high heat, add vegetable broth and sauté garlic until fragrant.
- Add bell peppers and carrots; cook for about 2 minutes until slightly tender.
- Add broccoli florets; continue to sauté for another 3-4 minutes until bright green and tender-crisp.
- Toss in the cooked noodles along with soy sauce and sesame oil; mix well to coat all ingredients.
- Finish by adding chopped green onions on top before serving hot.
