Description

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 cans (15 oz each) white beans (cannellini or great northern), rinsed and drained
  • 4 cups low-sodium vegetable broth
  • 2 sprigs fresh rosemary, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until softened, about 5 minutes.
  2. Stir in minced garlic and rosemary; cook for another minute until fragrant.
  3. Add the rinsed white beans and vegetable broth. Bring to a simmer.
  4. Season with salt and pepper to taste and let simmer on low heat for 20–25 minutes.
  5. Just before serving, stir in lemon juice for added brightness.
