- 2 tbsp extra virgin olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 2 cans (15 oz each) white beans (cannellini or great northern), rinsed and drained
- 4 cups low-sodium vegetable broth
- 2 sprigs fresh rosemary, chopped
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until softened, about 5 minutes.
- Stir in minced garlic and rosemary; cook for another minute until fragrant.
- Add the rinsed white beans and vegetable broth. Bring to a simmer.
- Season with salt and pepper to taste and let simmer on low heat for 20–25 minutes.
- Just before serving, stir in lemon juice for added brightness.
