Ingredients

Scale
  • 810 ladyfinger cookies, crushed
  • 1 cup mascarpone cheese
  • 1 cup brewed espresso or strong coffee, cooled
  • 1/2 cup unsweetened cocoa powder (for dusting)
  • 1/4 cup powdered sugar (adjust to taste)
  • 1/2 cup semi-sweet chocolate chips (optional)
  • 1 tsp vanilla extract

Instructions

  1. Brew about 1 cup of espresso or strong coffee and let it cool.
  2. Crush the ladyfinger cookies into fine crumbs using your hands or a food processor.
  3. In a large bowl, combine crushed cookies, mascarpone cheese, cooled coffee, powdered sugar, vanilla extract, and chocolate chips. Mix until well combined.
  4. Using your hands, scoop out small portions of the mixture and roll them into balls about 1 inch in diameter.
  5. Roll each ball in unsweetened cocoa powder until evenly coated.
  6. Place the balls on a tray lined with parchment paper and refrigerate for at least one hour before serving.

Notes

  • Use freshly brewed coffee for the best flavor.
  •  Experiment with flavored extracts like almond or orange for a unique twist.
  •  For added texture, roll the balls in crushed nuts instead of cocoa powder.
