- 4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 3 tbsp high-quality extra virgin olive oil
- 1 cup low-sodium chicken broth
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 2 tsp cornstarch
Instructions
- Slice each chicken breast into thin cutlets (about 1/2 inch thick) for even cooking.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken cutlets for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in lemon juice and chicken broth, stirring to combine.
- Sprinkle cornstarch into the sauce while whisking to thicken slightly. Allow it to simmer for 1 minute until smooth.
- Return the cooked chicken cutlets to the skillet, coating them in the sauce for a couple of minutes.
- Remove from heat and garnish with chopped parsley before serving.

- For a gluten-free version, replace cornstarch with almond flour.
- Add capers or sun-dried tomatoes for an extra burst of flavor.
