Ingredients

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 3 tbsp high-quality extra virgin olive oil
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tsp cornstarch

Instructions

  1. Slice each chicken breast into thin cutlets (about 1/2 inch thick) for even cooking.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken cutlets for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in lemon juice and chicken broth, stirring to combine.
  4. Sprinkle cornstarch into the sauce while whisking to thicken slightly. Allow it to simmer for 1 minute until smooth.
  5. Return the cooked chicken cutlets to the skillet, coating them in the sauce for a couple of minutes.
  6. Remove from heat and garnish with chopped parsley before serving.

Notes

  • For a gluten-free version, replace cornstarch with almond flour.
