- 3 lbs beef short ribs
- 2 medium sweet onions, chopped
- 4 garlic cloves, minced
- 2 cups low-sodium beef broth
- 2 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tsp dried thyme
- Salt & pepper to taste
Instructions
- Chop onions and mince garlic.
- Heat a skillet over medium-high heat and sear each beef rib until browned on all sides.
- In the crock pot, layer the seared ribs at the bottom, then add onions, garlic, Worcestershire sauce, brown sugar, thyme, salt, and pepper.
- Pour beef broth over the ribs until they are two-thirds submerged.
- Cover and cook on low for 8 hours or high for 4 hours.
- Serve tender ribs with mashed potatoes or crusty bread to soak up the juices.
