Ingredients

  • 3 lbs beef short ribs
  • 2 medium sweet onions, chopped
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp dried thyme
  • Salt & pepper to taste

Instructions

  1. Chop onions and mince garlic.
  2. Heat a skillet over medium-high heat and sear each beef rib until browned on all sides.
  3. In the crock pot, layer the seared ribs at the bottom, then add onions, garlic, Worcestershire sauce, brown sugar, thyme, salt, and pepper.
  4. Pour beef broth over the ribs until they are two-thirds submerged.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Serve tender ribs with mashed potatoes or crusty bread to soak up the juices.
