- 1 lb ground turkey or chicken
- 2 tbsp taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, sliced
- 1 cup shredded cheese (cheddar or Monterey Jack)
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Bake sweet potatoes for about 45 minutes until tender.
- In a skillet over medium heat, cook ground turkey or chicken until browned, about 7-10 minutes. Drain excess fat if necessary.
- Stir in taco seasoning and black beans; cook for an additional 3 minutes until heated through.
- While the filling cooks, prepare toppings by chopping cherry tomatoes, slicing avocado, and chopping cilantro.
- Once sweet potatoes are baked and slightly cooled, slice them open lengthwise and fill with the meat mixture. Top with tomatoes, avocado slices, cheese, cilantro, and drizzle lime juice.
