  • 4 medium sweet potatoes (about 1.5 lbs total)
  • 1 lb ground turkey or chicken
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, sliced
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Bake sweet potatoes for about 45 minutes until tender.
  3. In a skillet over medium heat, cook ground turkey or chicken until browned, about 7-10 minutes. Drain excess fat if necessary.
  4. Stir in taco seasoning and black beans; cook for an additional 3 minutes until heated through.
  5. While the filling cooks, prepare toppings by chopping cherry tomatoes, slicing avocado, and chopping cilantro.
  6. Once sweet potatoes are baked and slightly cooled, slice them open lengthwise and fill with the meat mixture. Top with tomatoes, avocado slices, cheese, cilantro, and drizzle lime juice.
