  • 1 can (15 oz) black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tbsp extra virgin olive oil
  • 1 cup salsa or tomato sauce
  • Juice of 1 lime
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent, about 3 minutes. Add garlic and red bell pepper; cook until tender.
  3. Stir in the sweet potatoes, cumin, salt, and pepper. Cook for about 10 minutes until sweet potatoes are fork-tender but still firm.
  4. Add the black beans and salsa or tomato sauce, mixing gently to combine.
  5. Transfer to a baking dish and spread evenly. Bake for 15-20 minutes until golden brown on top.
  6. Drizzle with lime juice and garnish with cilantro before serving.
