- 1 can (15 oz) black beans, rinsed and drained
- 1 red bell pepper, diced
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tbsp extra virgin olive oil
- 1 cup salsa or tomato sauce
- Juice of 1 lime
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent, about 3 minutes. Add garlic and red bell pepper; cook until tender.
- Stir in the sweet potatoes, cumin, salt, and pepper. Cook for about 10 minutes until sweet potatoes are fork-tender but still firm.
- Add the black beans and salsa or tomato sauce, mixing gently to combine.
- Transfer to a baking dish and spread evenly. Bake for 15-20 minutes until golden brown on top.
- Drizzle with lime juice and garnish with cilantro before serving.
