Ingredients

  • 2 large bell peppers, diced
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28 oz can fire-roasted tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 cup uncooked rice (brown or white)
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant.
  2. Add the ground turkey and cook until browned.
  3. Stir in the diced bell peppers, salt, and Italian seasoning; cook for about 5 minutes.
  4. Mix in fire-roasted tomatoes and vegetable broth; bring to a simmer.
  5. Add uncooked rice; reduce heat to medium-low and cover partially. Cook for about 20 minutes or until rice is tender.
  6. Taste and adjust seasoning as needed before serving.
