- 1 medium onion, chopped

- 28 oz can fire-roasted tomatoes
- 4 cups low-sodium vegetable broth
- 1 cup uncooked rice (brown or white)
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant.
- Add the ground turkey and cook until browned.
- Stir in the diced bell peppers, salt, and Italian seasoning; cook for about 5 minutes.
- Mix in fire-roasted tomatoes and vegetable broth; bring to a simmer.
- Add uncooked rice; reduce heat to medium-low and cover partially. Cook for about 20 minutes or until rice is tender.
- Taste and adjust seasoning as needed before serving.
