Description

This cheesy spinach lasagna is a delightful dish layered with fresh ingredients, perfect for family gatherings or cozy dinners.


Ingredients

  • 9 lasagna noodles (no-boil preferred)
  • 4 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 2 cups marinara sauce
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the lasagna noodles according to package instructions and set aside on parchment paper.
  3. In a bowl, mix ricotta cheese, eggs, half of the mozzarella, garlic powder, salt, and pepper until well combined.
  4. In an olive oil-coated baking dish, spread a layer of marinara sauce. Add a layer of noodles followed by half of the ricotta mixture and half of the spinach.
  5. Repeat layering with remaining noodles, ricotta mixture, more marinara sauce, and spinach. Top with remaining mozzarella and Parmesan cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes or until golden brown. Let it cool slightly before slicing.
