- 9 lasagna noodles (no-boil preferred)
- 4 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 2 cups marinara sauce
- 1 tsp garlic powder
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the lasagna noodles according to package instructions and set aside on parchment paper.
- In a bowl, mix ricotta cheese, eggs, half of the mozzarella, garlic powder, salt, and pepper until well combined.
- In an olive oil-coated baking dish, spread a layer of marinara sauce. Add a layer of noodles followed by half of the ricotta mixture and half of the spinach.
- Repeat layering with remaining noodles, ricotta mixture, more marinara sauce, and spinach. Top with remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes or until golden brown. Let it cool slightly before slicing.
