- 1 lb chicken breast or shrimp, diced
- 2 green onions, chopped
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, warm the olive oil. Sauté the garlic until fragrant, about 1 minute. Add the chopped bell peppers and cook until slightly softened.
- Add the diced chicken breast or shrimp and sauté until cooked through—about 5-7 minutes for chicken or 3-4 minutes for shrimp.
- Reduce heat and stir in the heavy cream, gradually adding the Parmesan cheese until melted and creamy.
- Mix in the Cajun seasoning, adjusting to taste.
- Combine the cooked pasta with the sauce mixture until well coated. Serve hot, garnished with green onions.
