Instructions
- Gather all ingredients. Chop the green chilies, onion, and garlic while the chicken rests at room temperature.
- Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté until softened (about 5 minutes).
- Add the boneless chicken thighs to the skillet. Season with salt and pepper; cook until browned (about 7 minutes per side).
- Stir in chopped green chilies and lime juice; simmer for an additional 10 minutes until the chicken is cooked through.
- Just before serving, mix in fresh cilantro for added aroma and flavor.
