Instructions
- Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise, scoop out seeds, drizzle with olive oil, and season with salt and pepper.
- Place the squash cut-side down on a parchment-lined baking sheet and roast for 30-40 minutes until tender.
- While the squash roasts, combine ground turkey, minced garlic, Italian herbs, salt, pepper, and Parmesan cheese in a bowl; form into small meatballs.
- Heat olive oil in a skillet over medium heat. Add meatballs and cook for about 10 minutes or until browned all over and cooked through (internal temperature should reach 165°F).
- Fluff the roasted spaghetti squash strands with a fork and serve alongside meatballs. Optionally drizzle with marinara sauce before serving.
