Instructions
- Wash the okra under cold water, trim the ends, and slice into bite-sized pieces. Chop the tomatoes, dice the onion, and mince the garlic.
- In a large skillet over medium heat, warm the vegetable oil. Add the onions and sauté until translucent (about 3-4 minutes). Stir in garlic for an additional minute.
- Add chopped tomatoes and sliced okra to the skillet. Season with salt, pepper, and cayenne if desired. Stir well to combine.
- Lower the heat, cover the skillet, and let simmer for 15-20 minutes until flavors meld and okra is tender but not mushy.
