Description

Southern Okra and Tomatoes is a colorful, comforting dish that combines tender okra and juicy tomatoes, perfect for summer gatherings or cozy dinners.

Ingredients

Scale
  • 1 pound fresh okra, sliced
  • 4 ripe tomatoes, chopped
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Pepper to taste
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Wash the okra under cold water, trim the ends, and slice into bite-sized pieces. Chop the tomatoes, dice the onion, and mince the garlic.
  2. In a large skillet over medium heat, warm the vegetable oil. Add the onions and sauté until translucent (about 3-4 minutes). Stir in garlic for an additional minute.
  3. Add chopped tomatoes and sliced okra to the skillet. Season with salt, pepper, and cayenne if desired. Stir well to combine.
  4. Lower the heat, cover the skillet, and let simmer for 15-20 minutes until flavors meld and okra is tender but not mushy.
  5. Taste and adjust seasoning before serving. Enjoy your Southern Okra and Tomatoes alone or over rice!

Notes

  • For added flavor, sauté okra first to reduce its sliminess.
  •  Feel free to customize with bell peppers or use canned tomatoes if fresh ones aren’t available.
