Description

Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 large yellow onion, chopped
  • 1 cup low-sodium chicken broth
  • 1 cup BBQ sauce (your choice)
  • 2 tsp ground cumin
  • 1 tsp smoked paprika

Instructions

  1. Finely chop the onion and mince the garlic.
  2. Layer the chopped onion at the bottom of the slow cooker. Place the chicken breasts on top and add minced garlic.
  3. Pour the chicken broth and BBQ sauce over the chicken.
  4. Season generously with cumin and paprika.
  5. Cook on low for 6-8 hours or high for about 4 hours until easily shreddable.
  6. Shred the chicken in the pot with two forks and mix with juices before serving.
