Ingredients

Scale
  • 2 lbs beef chuck roast
  • 1 cup sour cream
  • 1 cup sliced mushrooms
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 8 oz egg noodles (cooked separately)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Gather all ingredients. Finely chop the onion and garlic; slice mushrooms thickly.
  2. In a skillet, heat olive oil over medium heat. Sear the beef chuck roast until browned on all sides.
  3. Add onions, garlic, and mushrooms to the skillet. Sauté until onions are translucent.
  4. Transfer the mixture to a slow cooker. Pour in beef broth and Worcestershire sauce; stir well.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours until meat is fork-tender.
  6. Stir in sour cream before serving over cooked egg noodles.

Notes

  • For added flavor, consider swapping mushrooms with carrots or peas.
  • If you don’t have a slow cooker, use a Dutch oven on low heat for similar results.
