Ingredients

  • 1 lb ground beef or lamb
  • 1 medium yellow onion, chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp butter
  • ½ cup milk
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet over medium heat, sauté the onion until translucent. Add garlic and cook until fragrant. Brown the ground beef or lamb.
  3. Stir in carrots and peas; add thyme and rosemary. Pour in beef broth; season with salt and pepper. Simmer until tender.
  4. Boil potatoes in salted water until fork-tender; drain and mash with butter and milk until creamy.
  5. Layer meat mixture in a baking dish, top with mashed potatoes, fluff with a fork.
  6. Bake for 25-30 minutes or until the top is golden brown.
