- 1 medium yellow onion, chopped
- 2 medium carrots, diced
- 1 cup frozen peas
- 2 cloves garlic, minced
- 1 cup low-sodium beef broth
- 2 lbs Yukon Gold potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup milk
- Salt and pepper to taste
- 1 tsp dried thyme

Instructions

- Boil potatoes in salted water until fork-tender; drain and mash with butter and milk until creamy.
- Layer meat mixture in a baking dish, top with mashed potatoes, fluff with a fork.
- Bake for 25-30 minutes or until the top is golden brown.
