Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning
  • Juice of 1 lime
  • 8 small flour or corn tortillas

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss the shrimp with olive oil and fajita seasoning until well-coated.
  3. Spread the seasoned shrimp, sliced bell peppers, and onion evenly on the prepared baking sheet.
  4. Bake for 10-12 minutes until the shrimp are pink and opaque.
  5. Squeeze fresh lime juice over the dish before serving and offer warm in tortillas with your choice of toppings.

Notes

  • For added flavor, substitute some of the bell peppers with zucchini or add fresh cilantro before serving.
