- 1 lb large shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 2 tbsp fajita seasoning
- Juice of 1 lime
- 8 small flour or corn tortillas
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, toss the shrimp with olive oil and fajita seasoning until well-coated.
- Spread the seasoned shrimp, sliced bell peppers, and onion evenly on the prepared baking sheet.
- Bake for 10-12 minutes until the shrimp are pink and opaque.
- Squeeze fresh lime juice over the dish before serving and offer warm in tortillas with your choice of toppings.
