Ingredients

  • 1 cup steel cut oats
  • 4 cups vegetable broth
  • 2 cups fresh spinach
  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • ¼ cup grated parmesan cheese (optional)

Instructions

  1. In a medium saucepan, bring vegetable broth to a boil. Stir in steel cut oats and reduce to a simmer. Cook uncovered for 20-25 minutes until tender.
  2. While oats cook, heat olive oil in a skillet over medium heat. Sauté minced garlic for about 1 minute until fragrant. Add fresh spinach and cook until wilted.
  3. Add halved cherry tomatoes, salt, and pepper to the skillet. Cook for another 3-5 minutes until softened.
  4. Once the oats are cooked, fold them into the skillet mixture and stir gently to combine. Allow to cook together for an additional couple of minutes.
  5. Serve in bowls and top with grated parmesan cheese if desired.
