Ingredients

  • 1 lb ribeye steak, thinly sliced
  • 1 cup provolone cheese, shredded
  • 1 cup low-sodium beef broth
  • 1 medium sweet onion, sliced
  • 2 tsp garlic powder
  • 1 tsp black pepper
  • 2 tsp Dijon mustard
  • 2 tbsp olive oil

Instructions

  1. Gather all ingredients. Thinly slice the ribeye steak.
  2. Heat olive oil in a skillet over medium heat. Sauté onions until golden brown (5-7 minutes). Add seasoned steak strips and cook until fully done.
  3. Lay tortillas flat. Spread a thin layer of Dijon mustard on each, then add the steak-onion mixture and top with provolone cheese.
  4. Roll up each tortilla tightly from one end to another.
  5. In the same skillet, heat a bit more oil and sear the roll-ups seam-side down until golden brown (about 2-3 minutes per side).
  6. Warm beef broth in a saucepan over low heat for dipping.
  7. Cut roll-ups into bite-sized pieces and serve with warm broth.
