- 1 lb ribeye steak, thinly sliced
- 1 cup provolone cheese, shredded
- 1 cup low-sodium beef broth
- 1 medium sweet onion, sliced
- 2 tsp garlic powder
- 1 tsp black pepper
- 2 tsp Dijon mustard
- 2 tbsp olive oil
Instructions
- Gather all ingredients. Thinly slice the ribeye steak.
- Heat olive oil in a skillet over medium heat. Sauté onions until golden brown (5-7 minutes). Add seasoned steak strips and cook until fully done.
- Lay tortillas flat. Spread a thin layer of Dijon mustard on each, then add the steak-onion mixture and top with provolone cheese.
- Roll up each tortilla tightly from one end to another.
- In the same skillet, heat a bit more oil and sear the roll-ups seam-side down until golden brown (about 2-3 minutes per side).
- Warm beef broth in a saucepan over low heat for dipping.
- Cut roll-ups into bite-sized pieces and serve with warm broth.
