Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, whisk together flour, baking powder, and salt.
- In another bowl, mix milk, eggs, and olive oil until smooth.
- Fold the wet mixture into the dry ingredients until just combined.
- Stir in cheese, spinach (or kale), and bell peppers until evenly mixed.
- Spoon the batter into the muffin tins, filling each about two-thirds full.
- Bake for 20-25 minutes or until golden brown on top.
- Allow to cool for five minutes before transferring to wire racks.
