Ingredients

  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk (or plant-based milk)
  • 2 large eggs (or flax eggs)
  • 1/2 cup shredded cheddar cheese
  • 1 cup fresh spinach or kale, chopped
  • 1/2 cup diced bell peppers
  • 3 tbsp olive oil or melted butter

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, mix milk, eggs, and olive oil until smooth.
  4. Fold the wet mixture into the dry ingredients until just combined.
  5. Stir in cheese, spinach (or kale), and bell peppers until evenly mixed.
  6. Spoon the batter into the muffin tins, filling each about two-thirds full.
  7. Bake for 20-25 minutes or until golden brown on top.
  8. Allow to cool for five minutes before transferring to wire racks.
